Pull Up a Stool: Edinburgh's New Bars to Put on Your Guest List (With Opening Dates)

There's a question every Edinburgh host gets, usually within an hour of check-in: "Where should we go for a drink tonight?" And here's the thing — if your answer is the same pub you've been recommending since 2019, you're missing a trick. Guests notice when your local knowledge is current. It's the difference between a host and a concierge.
First, the local story behind the list. Nauticus, up on Duke Street in Leith, kept a window open right through lockdown — a serving hatch where local residents queued down the street for booze when nothing else was trading. It's a lovely story about surviving lockdown, and it's great to see the business going from strength to strength: great cocktails, a gloriously old-fashioned room that loves the things local Edinburgh people love — books, the piano, the bearded crazy guys behind the bar — and now a new opening on the Shore to show for it. Something Edinburgh hipster and cutting edge, now fantastically successful.
So this week, when the notedplaces account on Instagram rounded up eight new and incoming Edinburgh bars, I did what I always do: I turned it into homework. Here's the list, fact-checked, with opening dates — copy it straight into your welcome book.
Open Now
Understory — West End. Edinburgh's newest cocktail bar hides in a stone-vaulted basement at 1a Rutland Street, and it calls itself a "five-star dive bar" — inventive drinks, nostalgic flavours, zero pretension. It opened on 15 September 2026, so you can send guests there tonight.
Chez Bernard — The Shore, Leith. A French wine bar and bistro on Leith's prettiest street, from partners who really know their wine — great with seafood and cheese, open noon till late, seven days. Opened 1 August 2026, so it's finding its feet nicely.
The Keelson — 58 The Shore, Leith. From the team behind Nauticus — the lockdown window bar above — and Dogstar (I've reviewed Nauticus on my Google Maps page, so I can vouch for the pedigree), this one opened in June 2026 and pours a serious Old Fashioned alongside strong, simple beer. Staff who actually talk to you.
Whisky Quay Bar — Old Town. The Port of Leith Distillery has opened a whisky bar and shop at 26 St Giles' Street — a dram and a bottle within stagger of the Royal Mile. Ideal for guests who want to try Scottish whisky without committing to a full distillery tour.
Opening Soon (a.k.a. the Watch List)
The Lyon Public House — George Street. The £1.5 million replacement for Westside Rodeo promises pints, pies and duelling pianos. It was originally slated for August, but the latest word is October 2026 — worth telling guests to book, because New Town openings do not stay quiet for long.
The Blackbird — Leven Street. Fresh from a refurbishment, the Bar, Kitchen & Garden returns week beginning 28 September 2026 with its winter hours. One for the welcome book under "cosy nights".
Tamsons — Easter Road. The much-loved Hibs pub closed suddenly in July 2026, and Leith breathed a sigh of relief when a reopening was confirmed for this autumn — expected by the end of October, with the exact date still to come. When it reopens, Easter Road on a match day is an experience every visitor should have once.
The Charlotte Arms — Charlotte Square. A traditional pub with live sports and live music, from the team behind Kitty O'Shea's and Wunderbar. Opening date yet to be announced — keep an eye out and be the first host to name-drop it.
Why This Belongs in Your Welcome Book
A current list like this is quietly powerful. When I mention a venue that opened last month, guests look at me like I've handed them a key to the city — because locally, I have. It's also the cheapest hospitality upgrade there is: it costs you nothing to know what's new, and it reads as care.
A few ways I work it:
Match the bar to the guest. Whisky-lovers get Whisky Quay; the couple on a date night gets Chez Bernard; the friends on a hen do get the Lyon's piano singalong when it opens.
Write it down. A one-page "opened this season" sheet in the flat beats a verbal list guests will forget by dinner.
Follow up with photos. I document the places I actually visit on my Google Maps profile — 3.1 million views and counting — and guests love seeing a real person's shots before they go: https://www.google.com/maps/contrib/110901189836150962567
Keep It Fresh
Here's my last tip: set yourself a monthly reminder to check the new openings, because this list will be out of date by spring. That's Edinburgh — the city never stops reinventing itself, and the hosts who keep up are the ones with the five-star reviews for "local tips".
So: four open right now, four more before Christmas. Your guests' first question is answered for the season. You're welcome.
